Basic Lamb Casserole
Ingredients
1 1/2 pounds boneless lamb, cut in 3/4 -inch cubes
2 onions, cut in eighths
1/4 cup flour
2 1/2 cups water
1 teaspoon instant beef or chicken bouillon
Salt & pepper to taste
Directions
Combine lamb and onions in a casserole dish.
Stir in flour to coat meat.
Add water, bouillon, salt and pepper.
Cover.
Microwave for 5 minutes on HIGH.
Stir.
Reduce microwave power setting to Medium.
Microwave 18 - 25 minutes on medium power, or until meat is fork tender.
Of course cook times will vary depending on the microwave oven power. Check progress regularly and adjust cook time accordingly – as with all recipes.
